We are responsible for every step, from raising our stock to transporting our stock and packaging our meat as it comes off the butchers block. If you are in the Northern Rivers, we are also the ones delivering your fresh meat straight to your door, ensuring the highest level of freshness.

From the hills of Mudgee to the lush hinterland of Byron Bay, our two family-run farms are committed to ethical, sustainable farming. In Mudgee, we raise free-range, grass-fed sheep and cattle on open pastures, with a strong focus on traditional values and land care. Our Byron Bay farm produces premium beef using low-impact, hands-on practices that respect both the animals and the environment.

Bulk Meat Supply – How It Works

Lamb

We aim to supply an average minimum of 20kg of whole lamb. However, due to seasonal conditions, the lamb we provide may sometimes be smaller—or, in some cases, significantly larger—than 20kg. The weight of your lamb is based on the processor’s tag allocated at the time of processing, calculated from the hot carcass weight.

If your lamb happens to be smaller than 20kg, don’t worry—you won’t miss out! We’ll make up the difference with some of our delicious optional extras, such as our gourmet 100% lamb sausages, kofta, mince, or rissoles.

When your lamb is larger than 20kg, you’ll enjoy even greater value for money. We don’t charge you extra or remove any meat—you’ll receive the full amount from the processed carcass allocated to you. Where possible, we like to reward our amazing repeat customers and larger households by allocating the heavier lambs to them!

Each lamb is custom-cut to your specifications. Once you have selected your cuts your lamb is processed, cryo vacuum sealed, labelled & ready for delivery, directly to your door, fresh not frozen.

Buy Lamb

Beef

Our Black Angus beef is available as a quarter, half, or full body. Due to the natural variation in the size of each animal, we’re unable to offer set prices as we do for our lamb. Instead, we offer a per-kilogram rate, delivering exceptional quality and outstanding value.

At just $19.49/kg for a full beast (200-250kg), $19.99/kg for ½ beast (100-125kg) and $20.99/kg for ¼ beast (50-75kg) we believe we have found the perfect balance of quality and value.  At these great prices, you’ll have access to a full range of premium cuts when placing your order, including favourites such as T-bone, scotch fillet, and rump steaks.

When ordering a whole, half, or quarter body of beef, a non-refundable deposit is required to secure your order. Once the carcass has been processed and allocated a hot carcass weight, we’ll issue your final invoice based on that weight. Full payment is required before your order can be completed by our butcher.

Your beef will be broken down to your specifications. Once you have selected your cuts your body is processed, labelled, cryo vacuum sealed & ready for delivery, directly to your door, fresh not frozen.
